Public Food General Manager

Job Purpose

The prime role of this position is to upgrade and implement innovate ideas for food, services, facilities and style of public food operation including five fixed locations and up to six temporary facilities. To manage all public food operations at the unit to ensure excellent client relationships are maintained and developed.

Duties and Responsibilities

  • Responsible for assisting the Commercial Manager in managing the recruitment, interviewing, induction, training and appraisal of staff members in accordance with Catering policies and procedures
  • Responsible for the direction and supervision, motivation and discipline of all staff accountable to the position
  • Identifying and addressing training needs, including conducting in house training
  • Agreeing and setting aims and objectives with employees
  • Responsible for reviewing and updating the Standard Operating Manual relating to Public Food Operations.
  • Responsible for ensuring correct dress code is adhered to
  • Ensuring a high standard of service and customer care is delivered at all times
  • Analysis of customer feedback, responding by letter/email to client requests and complaints
  • Attending weekly client meetings, food tastings and site visits when required
  • Liaising with food suppliers and Head Chef to plan, cost and implement new menus ideas and food offerings
  • Discuss and make suggestions to the Client’s team on special menu requests and advise on prices for special requests
  • Day to day liaison with the client and their staff to ensure a good relationship is maintained and developed
  • Introduce modifications to systems and practices to improve customer service and profitability within the set budget
  • To communicate effectively with clients, verbally face to face and in writing
  • Attend and contribute to the agenda of team meetings
  • Responsible for communicating weekly activities and results to the Commercial Manager
  • Construct and create innovate displays to maximise sales
  • Communicate with and advise clients to ensure maximum sales impact.
  • Analyse and monitor customer trends, bookings and spends using Excel and Word packages
  • Effectively present and discuss information on customer research with the Commercial Manager and Client, identifying issues and suggesting solutions
  • Responsible for all merchandising and presentation of retail outlets
  • Health and Safety
  • Responsible for all hygiene, health and safety relating to the Public Food operation
  • Ensure all documentation is up to date as required by law
  • To carry out regular inspections and implement corrective action if required, communicate any maintenance issues to relevant parties
  • To communicate, train and document health and safety policy to staff
  • Finance Reporting & Planning
  • Responsible for security and accuracy of all cash floats and banking.
  • Assist the Commercial Manager in ensure staffing levels are controlled to ensure maximum efficiency and effectiveness at all times
  • Control, ordering and security of disposables, merchandising material, food and beverage stocks
  • Ensure all sales records and post event reports are submitted to the Commercial Manager daily
  • Ensure staff timesheets are completed accurately and submitted to the Commercial Manager daily
  • Ensure crown procedures on ordering of goods are followed
  • Financial forecasting, calculating G.Ps, setting prices, monitoring and agreeing targets with the Commercial Manager
  • Monitor sales and spending against budgets, review information and make suggestions to improve profitability
  • Undertake any reasonable duties as dictated by Managing Director that are within skills and capabilities.
