Head Of Purchasing

Job Purpose

Reporting to and working closely with the Managing Director this role is to lead and develop the Company’s purchasing department to ensure that the best quality product is purchased at the right price and quantity to ensure our restaurants deliver the right product offer. In particular, the role is accountable for delivering the restaurant margins and ultimately budgeted profits through supplier negotiation and management of internal supply chain controls in restaurants. The role manages all food, wine and operations supplier bases and contracts as well as the entire supply chain

Duties and Responsibilities

  • To be instrumental in the delivery of budgeted profits at GP level through contract negotiation
  • To maintain close working relationships with all managers and chefs ensuring purchasing continually reflects the needs of the business and its customers
  • To develop the department’s income stream through listing fees, retrospective discounting and marketing support funds.
  • To support the marketing team through supplier funding of promotions and marketing initiatives
  • To be responsible for compliance with all supplier related food Health and Safety regulations
  • To uphold environmental standards and policies throughout the buying process
  • To manage the business’s purchasing related information systems – ensuring price and, subsequent, invoice accuracy
  • To be responsible for the day to day management and development of the Kirby Street purchasing team
  • To manage the new development buying process ensuring adherence to budget and timelines whilst sourcing product in line with design standards
  • Support the delivery of restaurant budgets at OP level via process enhancement of internal controls
  • Adopt best practices to reduce overheads and attain improved efficiencies
  • To implement and maintain best practice buying and stock management disciplines Working closely with the finance team to ensure that purchasing and stock management IT systems and operator skills are managed and used effectively
  • Anticipate and take responsibility for driving through business change
  • Take responsibility for the future of the department by challenging assumptions, developing contingency plans, and generating imaginative, novel or adaptive ideas
